I try to alternate each day between a really high protein breakfast like scrambled eggs or smoked mackerel, followed by an apple with peanut butter, and my ‘superfood porridge’. Which I haven’t yet decided if is too delicious and indulgent to be a regular breakfast event.

  1. Superfood Porridge
    • Whole oats, with 50% milk, 50% water
    • Blueberries
    • Nectarine
    • Peanut butter
    • Chia, flax, sesame, sunflower seeds
    • Maple syrup (optional- if you’re feeling ultra indulgent)
  1. Banana Pancakes
    Plain flour, eggs, milk, bananas, butter, fruity topping, any other desired pancake topping

    • Mix eggs, banana, flour and a little milk until it’s not lumpy
    • Gradually add more milk until it’s a “slightly thicker than the consistency of cream” – or however your Dad taught you how to make pancakes
    • Heat a little butter in a pan and cook until golden brown
