Chicken & Avocado

 

Simple Salad with sweet potato:
Chicken fillets, 1/2 avocado, 1/2 sweet potato, white wine vinegar, olive oil, pumpkin &sunflower seeds

  • Prep chopped sweet potato, avocado and chicken with olive oil, S&P and paprika
  • Bake for about 25 mins
  • Put chicken, avocado and dressing onto spinach and lettuce leaves
  • Sprinkle with seeds

 

Slightly more complex, warm honey & mustard salad without sweet potato:
Chicken fillets, 1/2 avocado, 1/2 red onion, honey, whole grain mustard, vinegar, sunflower, flax &pumpkin seeds, S&P

  • Prep chicken and avocado with S&P and paprika, and bake for 15-20 mins
  • Remove from oven, add a little water, vinegar, honey, mustard, chopped red onion
  • Bake for a further 10-15 minutes
  • Place onto spinach leaves
  • Enjoy!
