Chicken, Potato and Crown Prince Squash Bake
- Chicken thighs, skin-on is better so they don’t dry out in the oven
- Squash, any variety will do. I used half a crown prince
- Potatoes
- Rosemary
- Thyme
- Garlic, half a bulb
- Olive oil
- Salt and black pepper
- Preheat the oven to 200 degrees celsius.
- Peel and chop the squash and wash and/or peel the potatoes and half them.
- Add the veg to a large bowl and combine with the olive oil, salt and pepper and herbs.
- Transfer the coated veg to a large pot, and season the chicken in a similar way.
- Nestle the chicken in between the veg inside the pot, and top with more herbs and the half garlic bulb. Drizzle a little extra olive oil over the garlic.
- Roast in the oven with the lid on for 20 minutes, then a further 30-35 minutes with the lid off until things are golden brown.
