Chicken and Squash One Pot

Chicken, Potato and Crown Prince Squash Bake

  • Chicken thighs, skin-on is better so they don’t dry out in the oven
  • Squash, any variety will do. I used half a crown prince
  • Potatoes
  • Rosemary
  • Thyme
  • Garlic, half a bulb
  • Olive oil
  • Salt and black pepper
  1. Preheat the oven to 200 degrees celsius.
  2. Peel and chop the squash and wash and/or peel the potatoes and half them.
  3. Add the veg to a large bowl and combine with the olive oil, salt and pepper and herbs.
  4. Transfer the coated veg to a large pot, and season the chicken in a similar way.
  5. Nestle the chicken in between the veg inside the pot, and top with more herbs and the half garlic bulb. Drizzle a little extra olive oil over the garlic.
  6. Roast in the oven with the lid on for 20 minutes, then a further 30-35 minutes with the lid off until things are golden brown.
