Beef Stew and Dumplings

One of those find some organic meat on offer and text mum ‘how do I cook this’ meals. I made this before Christmas and don’t remember exactly what I did… but here are the photos and mother’s recipe exactly as she sent it, spelling mistakes and all.

Ingredients

  • Beef, in chunks
  • Salt and peper
  • Rosemary
  • Thyme
  • Bay leaf
  • Garlic
  • Half bottle red wine
  • Large white onion
  • Mushrooms
  • Oil or butter
  • Suet dumpling mix

Method

Slow cook. Maybe leave the meat in a mix of litter salt pepper garlic dried herbs slosh of any beer, Sherry, or wine or spirt you have open and a dribble of oil then next day or after a few hours fry it of lightly with the onions and mushroom add a LITTLE stock (not too much) and some water to cover and bring to boil then simmer on top or in a low temp over for two hours , reduce.

Re dumplings you need to buy some suit* and the follow instructions on pack – after the meat…… has simmered to the end then you pop the dumplings into the broth you’ve made and pop into oven the cook for about 30 mins you can brown off under the grill
